I really enjoy eating at this restaurant. I have eaten there twice in the last couple of weeks. Yes, it seems like I like Mexican food, which I do. On the menu, they have ceviche, so I had to try it since my first review was on ceviche; I thought I would compare the two. The ceviche at Los Cucos is excellent!!!! It is bursting with all the flavors of the ceviche and the sauce they serve it with is delicious!!! The only thing is they serve with crackers and again, I feel it is much better with the chips. The atmosphere is fun and lively!!! The waiters are very friendly and if you are there on a Friday night they have a Mariachi band and they were excellent. A very enjoyable experience and yes, I will eat there again and I will bring friends.

Centro Restaurant-Austin Ranch, TX
Hey ya'll,
This is a new restaurant located on Windhaven, The Colony Tx at Austin Ranch. The restaurant is in a good location, good atmosphere. It's brand new and they still have a few kinks to work out. I tried the appetizer - Ceviche and unless it is a new recipe, I think they left out the tomato juice or maybe it was just their version of ceviche, which I did not care for. Not much flavor, I did not taste the tomato or cilantro and they served with crackers and I prefer with tostada chips with my ceviche and I also prefer tabasco sauce in my ceviche. It was just okay, but however the chicken quesadillas were delicious.
AUTHENTIC GUATEMALAN CEVICHE - Cooks.com
4-6 medium tomatoes, finely diced
1-2 onion, finely diced
1/2 to 3/4 cup finely chopped cilantro
2-4 limes (depends on how much you like lime juice)
1/2-1 full can tomato juice
1 lb shrimp
1 tablespoon garlic
1 tablespoon Worcestershire sauce (optional)
salt and pepper
Simply, chop all tomatoes, onions, and cilantro and put in salad bowl. Squeeze limes into the juice. If you don't enjoy limes that much, you should still use at least 2 for this recipe.
Pour in tomato juice. Start boiling the shrimp and add garlic or Worcestershire sauce (optional). Then, add shrimp.
Finally, add salt, pepper, (will need alot!) and other spices such as garlic powder, lemon pepper, etc. if desired. Mix and serve cold.

Hey ya'll,
This is my first blog. I'm lost!!! But anyway, I thought it would be fun to blog about different restaurants that I have had the pleasure to eat at in the Dallas Texas area and/or other areas that I have visited. My husband and I were sitting in a restaurant one night and I told him that I wanted to start a foodie blog and he thought it was a great idea. Then we went to visit an old friend who deals in cookbooks and he encourage me to do so! Thanks Peter (www.oldcookbooks.com). So here I am and here we go.....
My intention is to share the dining experience. Some will be recommended and some not so much. I will even offer my recommendations on improvements. I'm sure there are tons of foodies out there already doing this. So why not one more!!!! I probably will only be posting once a week, because I don't eat every meal out. You know I have to watch that girlish figure!!!!
In addition, I will be sharing recipes!!!!
I don't have my schedule yet, that is still in the developing stages...but stay tune, you will not be disappointed.
